Simple and easy to prepare Ravva kesari..... I saw my mom preparing it with great ease and this took me 4 attempts to get the consistency and taste right. Yippie now I can make Ravva kesari to satiate my craving for sweets.

RAVVA KESARI ~ SEMOLINA PUDDING
Sooji/ Upma Ravva/ Semolina - 1 cup
Sugar- 1 cup (if you are a sweet lover, add bit more )
Water - 2 and 1/2 cups
Clarified butter/ Ghee - 5 tbsps
Cashew nuts- 10 - 12
Raisins - 10- 12
Cardamom - 3-4 pods or you can use powder (1/2 tsp)
In a heavy bottomed pan, add 2-3 tbsps of ghee and roast cashews and raisins until golden brown in color. Remove them and set aside. Now add one cup of sooji to the same pan and dry roast until golden brown in color. Keep stirring this sooji mixture till pleasant smell emanates in your kitchen. Add sugar and stir the mixture. Now slowly add water to this roasted sooji n sugar mixture and keep stirring to avoid lumps.
Mix all the contents well . Add remaining quantity of ghee and roasted cashew and raisins. Stir all the contents and remove this mixture onto a greased ghee plate and allow it to set. Cut into pieces,
If you wish you can add food color... I used organic yellow food color.
